This is a dry cure collar bacon, which we cure and smoke over oak at the shop. The collar is a muscle in the shoulder, with lots of woven fat running through it. If it was beef it would be the same cut as rib eye.
This is the bacon we use in our bistro, it’s cured with fennel and black pepper.
