Description

This is dry-cured in the shop with salt and sugars for 7 days and left for another 7 days to produce a dryer and more equalized bacon.  Most of the time we leave the rind on.  Won many great taste awards.

Smoked over oak wood for only 12 hours, so just lightly smoked.
