This large fresh open barn chicken will feed a Christmas gathering of 9-10 guests.
Roast in the centre of a pre-heated oven at 375F/190C (gas mark 5) for 20 mins per 450g plus 10-20 mins extra, basting occasionally for a moist flesh and crispy skin. Allow the chicken to rest for 15-20 mins before serving – which is the perfect time to pop a few Uptons stuffing balls into the oven!
