Salt-aged beef has a special tenderness and depth of flavour that’s hard to beat. This size of rib will serve 7-9 diners. Fine-grained, moist and tender, choose our quality forerib for a classic celebratory meal and you won’t be disappointed.
We are using 3 local farms for our Christmas beef, Chilworth, Chandlers ford, and Durley. All aged for at least 3 weeks.
Himalayan salt is exceptional in terms of purity and its flavour-enhancing qualities, so our salt wall creates the perfect environment for the ageing process.
Over a period of 28–45 days, it concentrates the flavour of the meat, seals the natural juices and purifies the air in the room, producing totally unique, sweet, flavoursome beef.
