Similar looking to to the hanger, but thicker, bigger and less offally ( well the hanger is in there on the in side with Offaly bits)
Great steak, located between the rump/ sirloin, and the end of the flank (belly) this is the one the yanks call flank steak, it is the best steak from the flank but don’t get confused, there 2 other skirt steaks in the flank.
Again, the marinade work well with this course textured cut, full of flavour.
Also like the hanger steak it is best sliced against the grain before serving.
Great for fajitas and stir frys, reasonably priced too
